Eater's Digest -- How About Making A 20-Mnute Chili-Flavored Beef Stew?

Start out with a pound of boneless sirloin steak cut into thumb-size pieces. Lightly coat with nonstick cooking spray a large nonstick pot over medium high heat.
Season beef with 1/2 tsp of chili powder and 1/8 tsp of salt. Cook the beef for two minutes, turning once, remove to a plate.

Add 1 chopped onion, 1 green pepper cored, seeded and diced; 3 cloves of chopped garlic, cook for five minutes, stirring occasionally. Add 1 tsp dried oregano, remaining 2 tsp of chili powder and 1/2 tsp salt.

Stir 1 Tbls flour into the broth until dissolved and mix into pot. Add 2 cups beef broth, 1 can (15 oz) stewed tomatoes, 1 pound baby carrots, halved, 1/2 lb. small potatoes, halved.

Simmer on medium low for 10 minutes or until veggies are tender. Add 1 pkg. (10 oz.) frozen corn, thawed, and cooked beef. Cook 2 minutes to heat through. Garnish with 1/4 cup chopped cilantro just before serving.
