Eater's Digest...Harvest Flavors With Acorn Squash Bars...Yums For The Tum

Preheat oven to 350 F. Cut 2 large acorn squash in half, scoop out the seeds. Place cut side up in a baking dish, add one cup of water to the dish and roast in preheated oven for about 60 minutes or until fork tender.

Set aside to cool. Once cool, scoop out flesh and process in a food processor until smooth.
Lightly grease a 9x13 cake pan.

In a bowl, mix together 1 1/2 cups brown sugar, 3/4 cup unsweetened applesauce, 4 eggs, 1 tsp vanilla, 1/2 tsp salt, 1 cup flour, 1 cup whole wheat flour, 2 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon.

Pour in pan and bake for 30 to 40 minutes or until toothpick inserted in center comes out clean.
